Winter Spiced Sweet Potato Soup (GF, DF, Vegan)

Ingredients (Serves 4)

300 ml vegetable stock

2 tsp of olive oil

1 chopped onion

2 cloves of chopped garlic

1 inch (10g) of minced ginger

1 tsp of dried turmeric

1 tsp cumin

1/2 tsp cinnamon

1 large sweet potato, chopped

1 can of coconut milk


1. SautΓ© the onion, garlic, ginger & turmeric, cumin and cinnamon in the olive oil

2. Add the vegetables & the stock & cook until the vegetables are soft

3. If there is not enough stock to cover the vegetables add some extra water

4. Whizz using a handheld mixer

5. Add the coconut milk and stir.Β  Cook for a further 2-3 minutes on low heat

Serve with 2 slices of BFree Oaty Loaf and enjoy!
