Vietnamese Banh Mi

Ingredients

  • 100g raw vegetables (carrots, red cabbage and raddish)
  • 3 tbsp rice mirin
  • 1 tbsp honey/maple syrup
  • Cucumber
  • 100g tofu
  • Hummus/mayonnaise
  • 2 tbsp hoisin marinade
  • Coriander
  • Mint
  • Red chilli
  • Hot sauce, to serve

Method

  1. Bake 2 Triple Seeded Bake at Home Baguettes for 7-9 minutes at 180Β°C
  2. Dry the tofu, slice thinly, and cover in hoisin marinade. Set aside
  3. Shred/spiralise carrot and red cabbage. Thinly slice the radish
  4. Toss veg together with mirin and honey
  5. Cook tofu in a frying pan for 1 minute on each side
  6. Spread baguette with either hummus or mayonnaise
  7. Top with the veggie mix, cooked tofu, coriander, chili and mint. Serve with a drizzle of hot sauce
